Borsch - The Lost One

Refugees lose a lot when they are forced to flee their homes, but one thing they all travel with is their culture of which food is a large part.  Although my own upbringing was firmly in the English tradition, some Russian recipes were always in my mother’s cooking repertoire and Borsch was a family favourite.


NB:  Although this recipe calls for long, slow simmering, I cut the cooking time down considerably by using a pressure cooker, and cooking the soup on high for 45 minutes.
