The Lost One

Ingredients

  • 9 – 10 cups boiling water

  • 1 kg pounds beef:  My mother always used shin, but chuck steak, skirt or any stewing meat would do

  • 2 large carrots, sliced

  • 2 stalks of celery sliced

  • 1 whole cabbage, sliced

  • 2 onions, sliced

  • 2 bay leaves

  • 2 – 3 largish beetroot, peeled and sliced into strips

  • 8 peppercorns or freshly ground pepper

  • 1 tablespoon vinegar

  • 2 cups raw cut tomatoes (skinned)  or the same amount of canned tomato

  • 6 tablespoons butter

  • 1 tablespoon flour

  • 2 tablespoons tomato paste (or one small can)

  • Sour cream or yoghurt to serve
